Co-owner and Chef Rajesh made it his mission tobring an authenti c taste of India to the CaymanIslands. Originally from Chennai (Madras), he hastravelled the world, having worked for CarnivalCruises before arriving in Cayman 14 years ago. Hisexperience running kitchens in steakhouses andinternati onal restaurants has given him a solidgrounding in many types of cuisine. NowChef Rajesh experiments in his own kitchenwith ingredients and fl avours from acrossthe globe, coming up with his own uniqueIndian-infused creations.

A mild dish, originati ng in northern India,chicken ti kka masala is a fi rm favourite ofcurry lovers the world over – and SouthernSpice’s is no excepti on. Succulent pieces ofchicken are simmered in a rich tomato andcashew nut sauce, fl avoured with Indianseasonings, blended with cream and fi nishedwith fenugreek seeds.
